Short answer: double pane is the sensible standard for almost every climate today. Triple pane earns its extra cost mainly in genuinely cold climates with long, harsh winters — elsewhere the payback period is long.
Single pane
Mostly found in older homes, offering essentially no insulation value. If you have single pane glass today, double pane replacement is almost always worth it for comfort and energy costs alone.
Double pane
The current standard for good reason — a real jump in insulation and noise reduction over single pane, at a moderate cost premium.
Triple pane
Meaningfully better insulation again, but the added cost takes longer to pay back in energy savings unless you're in a genuinely cold climate or dealing with a very noisy location.
